Toffee Caramel Corn

Sticky toffee caramel on top of delicious caramel corn.


  • 4 cups plain air popped popcorn
  • 1/3 cup light corn syrup
  • 1/2 cup brown sugar
  • 6 tablespoons butter, divided
  • 1/3 cup Hershey toffee bits
  • 3 skor bars
  • Instructions

  • Pop your popcorn, removing unpopped kernels and place popcorn in a large bowl. On stove over medium heat, melt together corn syrup, brown sugar, 4 tablespoons butter, and toffee bits, stirring constantly until mixture is smooth.
  • Pour mixture over popcorn and toss with a rubber spatula or large spoon until popcorn is well coated. Spread popcorn out on a large baking sheet or aluminum foil on your counter.
  • In the same pan used earlier, add 2 tablespoons butter and skor bars, breaking bars into smaller pieces as you add them to the pan. Stir over medium heat until toffee is completely melted (about 10 minutes). 
  • Remove from heat and pour mixture over popcorn. Allow to cool completely and harden slightly before breaking into chunks.
