Slow Cooker BBQ Chicken Salad with Creamy Avocado Dressing

This salad is basically a bunch of my favorite ingredients all piled on a bed of lettuce!


  • 2-3 chicken breasts, frozen
  • 3 cups bbq sauce, divided
  • 1 cup water
  • 2 large ears of corn
  • 1 can black beans
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon onion powder
  • salt and pepper, to taste
  • 8 cups chopped romaine lettuce
  • Avocado Dressing

  • 1 avocado
  • 1/3 cup cilantro
  • 1 tablespoon fresh lime juice
  • 1/2 cup plain greek yogurt
  • 1 teaspoon minced garlic
  • 2 tablespoons oil
  • 2-3 tablespoons water
  • salt and pepper, to taste
  • Instructions

  • Add chicken, 2 cups bbq sauce, and water to your slow cooker. Cook on low for 6-8 hours or 4 hours on high. 30 minutes before serving, drain the liquid from the slow cooker, then return to low heat and add 1 cup bbq sauce and 1/2 teaspoon salt. 
  • Brush corn with oil and season with salt and pepper. Grill over medium-high heat until slightly charred. Cut off the kernels and set aside. 
  • Cook beans over medium heat with cayenne pepper and onion powder. Top lettuce with chicken, black beans, and corn. 
  • For the dressing, puree all the ingredients in a food processor until smooth and creamy. Drizzle over salad. Top with fresh cilantro, if desired.
