Oatmeal Butter Pecan Cupcakes are the perfect combo of sweet and salty.
1 1/2 cups flour
1/2 cup sugar
1/4 cup brown sugar
1 tablespoon baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
1/4 cup butter, at room temperature
3/4 cup old fashioned oats
1/2 cup milk
1/2 cup butter pecan syrup
1 can Duncan Hines whipped cream cheese frosting
Preheat to 350 degrees. In a bowl, blend together sugar and butter until light and fluffy. Add egg, milk, and syrup. In a separate bowl mix together flour, baking powder, cinnamon, nutmeg and oats.
Blend into wet ingredients until just combined. Line muffin tin with cupcake tins and fill 2/3 of the way full. Bake 18-20 minutes or until an inserted toothpick comes out clean. Remove from oven and allow to cool completely before piping frosting on top.
