Monterey Chicken Sandwiches

Easy 20 minute Monterey Chicken Sandwiches with seasoned chicken, bbq sauce, melty jack cheese, bacon, and all the fixin’s!
4 hamburger buns or soft sandwich rolls
4 boneless skinless chicken breasts, pounded to even thickness
1 teaspoon garlic powder
1 teaspoon chili powder
salt and pepper to taste
1/2 cup BBQ sauce
4 slices colby jack cheese (OR 4 slices mild cheddar cheese and 4 slices mozzarella cheese)
4-8 slices bacon, cooked to preferred crispiness
toppings of choice such as mayo, tomato, red onion, and romaine lettuce
Season chicken breasts with salt and pepper, garlic powder, and chili powder. Grill or cook in a skillet on the stove over medium heat for 4-6 minutes on each side until cooked through.
When chicken is fully cooked, place cheese on top of chicken and allow to melt.
Assemble sandwiches by spreading about 1/4 cup bbq sauce on each bun bottom half, then topping with chicken and cheese, bacon, remanning toppings, and bun top half. Serve immediately.
