Lemon Cashew Squares

Lemon squares glazed with icing and topped with cashews.
1 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 cup granulated sugar
1 cup powdered sugar
1/2 cup butter, softened
juice of 1 lemon
1 teaspoon lemon zest
1 1/2 teaspoons vanilla
1/2 cup chopped cashews, + additional for chopping
Preheat oven to 375 degrees. Grease and lightly flour a 9×13 pan. In a medium bowl combine flour, salt, and baking powder.
In another large bowl beat sugars and butter until light and fluffy, then add eggs and vanilla.
Slowly mix flour mixture into wet ingredients until completely combined, but do not overmix. Mix in lemon juice and chopped cashews.
Pour batter into pan and bake 22-25 minutes or until edges are lightly browned.
While base is baking, combine all frosting ingredients in a bowl and mix until smooth. Spread over warm base, top with additional cashews, and allow to cool one hour. Cut into squares and serve.
