Lemon Cashew Squares

Lemon squares glazed with icing and topped with cashews.


  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1/2 cup butter, softened
  • 3 eggs
  • juice of 1 lemon
  • 1 teaspoon lemon zest
  • 1 1/2 teaspoons vanilla
  • 1/2 cup chopped cashews, + additional for chopping
  • Instructions

  • Preheat oven to 375 degrees. Grease and lightly flour a 9×13 pan. In a medium bowl combine flour, salt, and baking powder. 
  • In another large bowl beat sugars and butter until light and fluffy, then add eggs and vanilla. 
  • Slowly mix flour mixture into wet ingredients until completely combined, but do not overmix. Mix in lemon juice and chopped cashews. 
  • Pour batter into pan and bake 22-25 minutes or until edges are lightly browned. 
  • While base is baking, combine all frosting ingredients in a bowl and mix until smooth. Spread over warm base, top with additional cashews, and allow to cool one hour. Cut into squares and serve.
