Creamy dreamcicle cookies with white chocolate chips and a hint of delicious orange.
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 ounces cream cheese
1 cup sweet cream butter
3/4 cup white sugar
2 1/4 teaspoons vanilla
4 tablespoons orange juice
1 teaspoon grapefruit zest
2 cups white chocolate chips or yogurt chips
Preheat oven to 375 degrees. In a medium bowl combine flour, baking soda, and salt. Set aside. In a larger bowl mix together butter, sugar, and cream cheese until light and fluffy. Add in egg, vanilla, and orange juice. Slowly mix in dry ingredients until just combined. Add zest.
Fold in chocolate chips and mix evenly. Use tablespoon to drop rounded mounds of dough onto a lightly greased cookie sheet. Bake 12-14 minutes or until edges begin to brown. Remove from oven and allow to cool 2-3 minutes before removing from sheet. Place on wax paper or wire rack to cool completely.
To assemble sandwiches, scoop 2-3 tablespoons of vanilla bean ice cream onto the bottom side of one cookie. Sandwich with a second cookie and gently press cookies together. Repeat with remaining cookies. Chill in freezer 1-2 hours before serving.
