Butternut Squash & Goat Cheese Penne

8 ounces O Organics Penne Rigate, cooked according to package’s instructions
2 tablespoons O Organics Extra Virgin Olive Oil
2 cups diced butternut squash, boiled or steamed til tender
1/4 white or yellow onion, diced
1/2 cup sliced mushrooms
1 tablespoon minced garlic
1/3 cup O Organics Goat Cheese
2 cups O Organics Fresh Baby Spinach
salt and pepper to taste
fresh herbs, for garnish
Drizzle olive oil into a large skillet over medium heat. Add butternut squash, onions, mushrooms, and garlic and saute until mushrooms are tender.
Stir in penne, spinach, and goat cheese until goat cheese is melted. Season with salt and pepper to taste. Garnish with fresh herbs such as thyme or oregano and serve immediately.
